Parmesan Crusted Sea Bass Fillets

topped with Caper Sauce
Ingredients:
1/2 cup grated parmesan cheese
1/4 cup flour

Mix these two ingredients together and coat the fish fillets. Heat in a skillet enough olive oil to cover the bottom of the skillet about an 1/16" high. When the oil is hot, add the fillets and brown to a golden brown on each side. Watch them closely as they cook very quickly. Remove from oil and drain on a paper towel.

Ingredients for caper sauce:
1/2 jar capers
2 Tablespoons minced garlic
1/4 cup white wine
1/4 cup lemon juice
1/2 stick butter

At the same time you preheat the oil, in a small saucepan, add wine and lemon juice until it boils,at this time add the capers and garlic. When the fish is done, add the butter and stir it in so it melts completely. Put the fish on the plate and top with sauce spooning the capers and garlic from the bottom. Keep most of the liquid part of the sauce on the side for dipping so your fish doesn't get too soggy while you are eating.
